Gumbo Pot Pies with Homemade Rough Puff Pastry

Ingredients

Rough Puff Pastry

(Or substitute with pre-made frozen puff pastry)

  • 1 ½ cups all-purpose flour

  • ½ tsp salt

  • ¾ cup unsalted butter, cubed and chilled

  • 3 tbsp cold water

  • 1 egg yolk

  • Egg Wash: 1 egg, beaten

Gumbo Base & Filling

  • ¾ cup vegetable oil

  • ¾ cup all-purpose flour

  • 1 lb Andouille Sausage (or your choice of sausage), sliced into thin rounds

  • 1 lb raw shrimp, peeled and deveined

  • 1 medium yellow onion, diced

  • 1 green bell pepper, diced

  • 1 stalk celery, diced

  • 2 cloves garlic, minced

  • 4 cups chicken broth

  • 1 can (14.5 oz) diced tomatoes

  • 2 tbsp Worcestershire sauce

  • ½ lime, juiced

  • ½ cup green onions, sliced

  • ¼ cup fresh parsley, chopped

  • Seasonings: ½ tsp red pepper flakes, ¾ tsp paprika, 1 tsp fresh thyme (chopped), 2 bay leaves, salt and black pepper to taste

  • Optional: Crystal hot sauce

Step-by-Step Instructions

1. Mix the Pastry Dough

In a large bowl, whisk together the flour and salt. Add the chilled, cubed butter and press it into the flour with your fingers until it forms peanut-sized clumps. Add the cold water and egg yolk, bringing the mixture together into a smooth ball. Wrap tightly in plastic wrap and chill in the refrigerator for 30 minutes.

2. Build the Dark Roux

While the dough chills, heat the vegetable oil in a large, heavy-bottomed pot or Dutch oven over medium heat. Whisk in the ¾ cup flour. Whisk constantly for 20 minutes as the roux deepens from beige to a dark orange-brown hue. Watch closely near the end, as it darkens quickly.

3. Sauté Vegetables & Sausage

Add the diced onion, bell pepper, and celery (the holy trinity) to the roux. Cook over medium heat for 5 minutes until softened. Stir in the minced garlic, red pepper flakes, paprika, thyme, bay leaves, two pinches of salt, and a few grinds of black pepper. Cook for 1 to 2 minutes until fragrant. Add the sliced Carlton Farms Andouille sausage and cook for 4 minutes, stirring frequently.

4. Simmer the Gumbo

Pour in the chicken broth, Worcestershire sauce, and diced tomatoes. Stir well to integrate the roux into the liquid. Bring to a gentle simmer and cook uncovered for 1 hour, stirring occasionally.

5. Laminate the Puff Pastry

While the gumbo simmers, turn the chilled dough onto a lightly floured surface. Roll into a rectangle (slightly larger than a standard sheet of paper). Fold longwise into thirds like a letter, then fold in thirds again the opposite way. Roll out into a rectangle once more and repeat the double fold. Wrap tightly in plastic wrap and return to the fridge to chill while the gumbo finishes simmering.

6. Assemble the Pot Pies

Preheat your oven to 425°F (218°C).

  • Roll out the chilled dough into a large sheet, about the thickness of a sweatshirt. Place a ramekin upside down on the dough and cut a circle about 1 inch wider than the rim. Repeat for all 4 ramekins.

  • Taste the gumbo and adjust seasoning with salt if needed. Remove from heat and stir in the lime juice, raw shrimp, green onions, and fresh parsley.

  • Ladle the gumbo into the four 12 oz ramekins, filling each about three-quarters full. Add a few dashes of Crystal hot sauce to each if desired.

  • Top each ramekin with a dough circle, pressing the overhanging edges firmly against the sides of the ramekin so the crust doesn't slip during baking. Brush generously with the egg wash.

7. Bake to Golden Perfection

Arrange the ramekins on a sheet pan. Bake at 425°F for 30 minutes. Carefully pull the pan out, apply a second coat of egg wash, and bake for an additional 5 to 10 minutes until the pastry is puffed and deep golden brown.
